PHS ProStart at FVTC culinary competition

A team from Plymouth High School participated in the recent 2023 Wisconsin State ProStart Invitational.

During the competition, held March 14 at Fox Valley Technical College in Appleton, teams had one hour to create an appetizer, entree, and dessert given only two gas burners and two 6-foot tables. Students needed to take all other equipment and supplies with them, including their own garbage can. Teams also had to cost out their ingredients and include prices for each course. 

The Plymouth team, which placed seventh out of 14 teams, consisted of Mason Buhk, Caden Preder, Braden Neu, and Caleb Martell. They created:

  • Orange Fennel Seared Tuna Steak Salad: Seared crusted tuna on a citrus red leaf salad with a blood orange vinaigrette
  • Grilled Lamb Chops with Mint Pistachio Pesto: Grilled lamb chops, sun-dried tomato polenta and glazed vegetables topped with pistachio mint pesto
  • Chocolate Sponge Strawberry Delight Trifle: Layers of chocolate sponge cake, strawberry cheesecake and sauce topped with chocolate buttercream

The competition was open to advanced culinary students in the nationally recognized ProStart program sponsored by the National Restaurant Association.
