learning in the classroom during a visit to the Sargento Foods research/science laboratory in Elkhart Lake.

Biotechnical engineering students at Plymouth High School recently toured the Sargento Foods research/science laboratory in Elkhart Lake.

The visit offered real-life applications of a recent classroom unit on the use of microbes as "bioreactors,” which instructor Ken Dunbar said refers to living organisms such as bacteria and yeast that can be used to make a product and can be engineered to make products to better fit our needs.

During their visit Feb. 7, the students saw how Sargento uses bacteria to make cheese, and also how the cheese industry needs to understand microorganism chemistry and biology.

Students did several hands-on activities, including making butter in a jar and curdling milk with lactic acid, which models actual cheese making.

In addition to offering real-life applications of classroom learning, the visit also introduced the biotech students to some potential careers as well, Mr. Dunbar said.

Students will be returning March 6 for a second hands-on module, as part of an on-going partnership between the school and the business.
